Buying from the Teflonfish ensures that your fish is only hours old, as fresh as if you'd caught it yourself.

Our fish are the best quality because of the way we choose to do business. The boat is 32 feet long. That's very small for a commercial fishing vessel. Most commercial boats have the option of staying at sea for days at a time. This means their fish can be a few days old. Well-kept fish are still in good condition and wholesaleable for a number of days. But the best fish are the freshest fish. The high end wholesalers (Whole Earth Markets, Andronico's, etc.) only buy from boats who caught their fish that day.

Multi-day fishing is not really an option on the Teflonfish. First, there's no head (that's sailor-talk for "no bathroom"). Second, there's not any space to sleep aboard the boat. Third, the boat's size and round-bottom aft hull ensure that the boat is tossed like a bathtub toy if the water gets rough overnight.

Your fish was caught on a hook and line, netted, and immediately hauled aboard, where it was cleaned, had the gill plate removed, and tossed on ice. *Hook and line* is better than netted fish because the fish has less time to become stressed and less chance of the fish getting damaged or killed while waiting to be hauled aboard. *Netting* is preferred to gaffing the fish because a misplaced gaff can damage the meat of the fish. Many commercial fisherman are very good at gaffing a fish only in the head, but we prefer to use a net. *Immediately hauling the fish aboard* means that the fish has less time to become stressed, die, or be munched on by other critters. Some methods of fishing leave fish dead in the water until the large fishing vessel gets around to that part of the line or net. *Gill plate removal* ensures that the fish is killed quickly and bled, this is a lot of what will make one fresh fish taste better than another. *Getting the fish on ice* is obviously a very good idea, but we've heard horror stories of salmon boats catching all the fish they can over a very long day, then gutting and icing the fish late at night, resulting in having the wholesaler refuse almost half of the catch because it's unsaleable. What a waste.
